Buckwheat Pancakes

Serves: 5

Ingredients:

  • 1 1/2 cups milk

  • 4 tablespoons vinegar or fresh lemon juice

  • 1 1/2 cups buckwheat flour

  • 1 1/2 cups flour

  • 4 tablespoons butter, melted

  • 2 tablespoons sugar

  • 1 1/2 teaspoons baking soda

  • pinch of salt

  • 2 large eggs

  • 2 teaspoons vanilla extract

Equipment/Utensils:

  • 2 large bowls or measuring jugs

  • whisk or fork

  • rubber spatula

  • frypan


Instructions:

  1. In a large bowl or measuring jug, stir the milk and vinegar/lemon juice. Set aside for five-minutes.

  2. In another large bowl or measuring jug, whisk the flours, sugar, baking soda and salt.

  3. Whisk the egg and vanilla into the milk.
